Boerewors – Traditional Braai Style

Description:
Boerewors is a classic South African sausage, made with coarsely minced beef and pork, seasoned with traditional spices. Grilled over charcoal or a gas braai, it’s juicy, flavourful, and perfect for family gatherings or weekend braais.


Ingredients (Serves 4–6):

  • 1 kg boerewors (pre-made from butcher or store-bought)

  • 1 tbsp oil (optional, for greasing grill)

  • Pap or bread, to serve

  • Chakalaka or tomato relish, optional


Tools Needed:

  • Braai (charcoal or gas grill)

  • Tongs

  • Grill brush (optional, for greasing)

  • Plate for serving


Process:

  1. Prepare the Grill: Light charcoal until medium-hot coals form or preheat gas grill to medium heat. Lightly oil the grill to prevent sticking if desired.

  2. Prepare the Boerewors: Shape into coils if not pre-coiled. Avoid pricking the sausage as it will dry out during cooking.

  3. Grill the Boerewors: Place the sausage on the grill. Cook slowly over medium heat for 15–20 minutes, turning occasionally to ensure even browning and cooking. The sausage should be slightly charred outside but juicy inside.

  4. Rest: Remove from the grill and let rest for 3–5 minutes before slicing.


Serving Suggestions:

  • Serve with pap (maize meal porridge) and chakalaka (spicy vegetable relish)

  • Alternatively, serve with bread and tomato relish for a casual meal

  • Great alongside a simple green salad or grilled vegetables


Storage Info:

  • Refrigerator: Cooked boerewors can be stored in an airtight container for up to 2 days.

  • Freezer: Freeze uncooked boerewors for up to 3 months. Thaw in the fridge before grilling.
