African Mango & Avocado Salad

Description:
A refreshing, tropical salad combining sweet mango, creamy avocado, and crisp greens. Lightly dressed with lemon juice and olive oil, it’s perfect as a side or starter.

Ingredients (Serves 4–6):

  • 1 ripe mango, peeled and cubed

  • 1 avocado, peeled and sliced

  • 4 cups mixed salad greens (lettuce, spinach, rocket)

  • 1 small red onion, thinly sliced

  • 1 cucumber, sliced

  • 2 tbsp fresh lemon juice

  • 2 tbsp olive oil

  • Salt and black pepper, to taste

  • Fresh coriander for garnish

Process:

  1. Combine salad greens, mango, avocado, cucumber, and red onion in a large bowl.

  2. Whisk together lemon juice, olive oil, salt, and pepper; drizzle over salad.

  3. Toss gently to coat ingredients evenly.

  4. Garnish with fresh coriander before serving.

Serving Suggestions:

  • Serve alongside grilled meats, fish, or chicken dishes

  • Ideal as a light starter or side
