Ingredients (Serves 4–6):

2 whole tilapia, cleaned and scaled

3 tbsp sunflower or canola oil (for frying)

1 tsp salt

1 tsp black pepper

1 lemon, sliced

3 cloves garlic, minced

2 medium tomatoes, chopped or grated

1 medium onion, chopped

1 fresh chili or 1 tsp chili flakes (optional)

1 tbsp tomato paste

Fresh coriander or parsley for garnish

Process:

Prepare the Fish: Rinse tilapia, pat dry, and score both sides with shallow diagonal cuts. Rub salt, pepper, and lemon juice over the fish. Let sit for 10–15 minutes.

Prepare Pepper Sauce: In a small pan, heat 1 tbsp oil. Sauté onions and garlic until soft. Add tomatoes, tomato paste, chili (if using), salt, and pepper. Cook down to a thick sauce, stirring occasionally. Set aside.

Fry the Fish: Heat remaining oil in a large skillet over medium-high heat. Fry tilapia for 5–7 minutes per side until golden brown and crispy. Handle carefully to prevent breaking the fish.

Serve: Place fried tilapia on a plate and pour pepper sauce over or serve on the side. Garnish with fresh coriander or parsley.
