A hearty and flavourful dish where chicken pieces are simmered with onions, tomatoes, and seasonal vegetables. This traditional African stew is comforting, wholesome, and perfect for family meals.
Ingredients (Serves 4–6):

1 kg chicken pieces (thighs, drumsticks, or a mix)

2 tbsp sunflower or canola oil

2 onions, chopped

3 cloves garlic, minced

2 medium tomatoes, chopped or grated

1 tbsp tomato paste

2 carrots, sliced
-
1 medium potato, cubed
-
1 green pepper, chopped

1 tsp paprika
-
1 tsp curry powder
-
1 tsp dried thyme
-
1 tsp salt (adjust to taste)

1 tsp black pepper

2 cups chicken stock or water

Fresh coriander or parsley (for garnish)

Process:

Brown the Chicken: Heat oil in a pot over medium-high heat. Add chicken pieces and brown on all sides. Remove and set aside.

Cook the Vegetables: In the same pot, sauté onions and garlic until soft. Stir in tomatoes, tomato paste, paprika, curry powder, thyme, salt, and pepper. Cook for 5 minutes.

Build the Stew: Return chicken pieces to the pot. Add carrots, potato, green pepper, and chicken stock. Stir to combine.

Simmer: Reduce heat to low, cover, and let simmer for 35–45 minutes until chicken is cooked through and vegetables are tender. Stir occasionally.

Finish & Serve: Garnish with fresh coriander or parsley and serve hot.
