Chicken Pieces – Stewed with Vegetables

Description:
A hearty and flavourful dish where chicken pieces are simmered with onions, tomatoes, and seasonal vegetables. This traditional African stew is comforting, wholesome, and perfect for family meals.


Ingredients (Serves 4–6):

  • 1 kg chicken pieces (thighs, drumsticks, or a mix)

  • 2 tbsp sunflower or canola oil

  • 2 onions, chopped

  • 3 cloves garlic, minced

  • 2 medium tomatoes, chopped or grated

  • 1 tbsp tomato paste

  • 2 carrots, sliced

  • 1 medium potato, cubed

  • 1 green pepper, chopped

  • 1 tsp paprika

  • 1 tsp curry powder

  • 1 tsp dried thyme

  • 1 tsp salt (adjust to taste)

  • 1 tsp black pepper

  • 2 cups chicken stock or water

  • Fresh coriander or parsley (for garnish)


Tools Needed:

  • Heavy-bottomed pot or saucepan

  • Wooden spoon

  • Knife & chopping board

  • Measuring cups and spoons


Process:

  1. Brown the Chicken: Heat oil in a pot over medium-high heat. Add chicken pieces and brown on all sides. Remove and set aside.

  2. Cook the Vegetables: In the same pot, sauté onions and garlic until soft. Stir in tomatoes, tomato paste, paprika, curry powder, thyme, salt, and pepper. Cook for 5 minutes.

  3. Build the Stew: Return chicken pieces to the pot. Add carrots, potato, green pepper, and chicken stock. Stir to combine.

  4. Simmer: Reduce heat to low, cover, and let simmer for 35–45 minutes until chicken is cooked through and vegetables are tender. Stir occasionally.

  5. Finish & Serve: Garnish with fresh coriander or parsley and serve hot.


Serving Suggestions:

  • With pap, sadza, or rice for a complete meal

  • Crusty bread works well to soak up the stew

  • Serve with a simple green salad or sautéed greens


Storage Info:

  • Refrigerator: Store leftovers in airtight containers for up to 3 days.

  • Freezer: Freeze for up to 2 months. Thaw overnight in the fridge before reheating.
